Frozen Block Dicer

The Magurit 506 and 502 DiceCut frozen block dicer can handle all known Euro sized blocks low temperatures, with optimal dice being produced between -8 and -12, eliminating drip loss and increasing yield by 2-8%.

Both machines initially slice the block at thicknesses of between 10 and 60mm by easy adjustment without tools, with the sliced product being automatically transported to the dicing head where interchangeable heads can be fitted to dice at dimensions of 10-100mm width and 3-50mm depth. The 506 dicer will produce a good quality 20x20mm dice from a standard euro sized frozen block at around 2.3T/hr, whereas the 502 dicing at 20mm will give around 1.5T/hr. Different dice sizes can be produced by simply changing the dicing head, with throughput dependant on the dice head selected.

Both machines require only one operator to feed and discharge the product, but automatic conveyor loading and take away can be provided if necessary.

Conveyor belts are easy to disassemble with the touch of a button and all areas are easily accessible for cleaning, and with all the machine surfaces being angled, cleaning liquids are allowed to run to drain.

Magurit’s fresh cooked meat dicer product is continuously carried forward by the 370mm wide transport belt on the 930 model, or a 200mm wide belt on the smaller 920, to the cutting area of the dicing machine. The variable speed belts and scimitar blades determine the first cutting dimension of your required final product size. Optional fixed width circular blade sets (6 – 30mm) are fitted to give the second dimension. Additional, a 1 dimensional version of the 930 is available for the dedicated slicing of product, this model is fitted with a discharge conveyor in place of the circular knife head.

The Magurit Unicut frozen meat dicer includes a number of different models, details of which are shown below. All of the range will handle meat, poultry and fish, or even vegetables and cheese, at very low temperatures.

With the exception of the 584 blocks are fed into the machine where a pneumatic ram pushes the product into the cutting head, ensuring a precise piece, slice, or dice.

Various cutting and dicing heads are available to produce specific piece or dice size and the slicing head is variable between 10mm & 60mm.

Model 555

This is the most versatile model in the range, capable of handling frozen blocks with a maximum dimension of 240mm x 480mm x 650mm and, dependent upon the cutting head, reduce this into, pieces or slices for further processing, or strips. Can handle product down to -25oC.

Model 550

This model is primarily designed for producing diced cubes from slices prepared on the 555, or strips from smaller blocks. The cutting chamber is reduced to accept blocks up to a maximum height of 170mm and will therefore accept a number of stacked strips, or standard fish blocks. Optimal processing temperature -10oC to -15oC.

Model 547L

The world’s largest frozen block guillotine, accepting blocks up to 380mm x 640mm x 1200mm. This is truly the best industrial frozen block slicer/dicer. All common block and plate-freezer materials can be reduced at a rate of up to 8T per hour.

The VersaWok Stir-Fry Cooker mechanizes stir-frying of Asian-style dishes on an industrial scale while producing high-quality results equal to those prepared by a professional chef.

Thermal oil heats the vessel’s serpentine jacket up to 590⁰F (310⁰C) providing the extremely high temperatures necessary to rapidly sear product surfaces while retaining their crisp or moist inner textures. Heating the VersaWok with thermal oil permits cooking temperatures far greater than heating with steam and provides an evenly heated surface devoid of the “hot and cold” spots common to direct flame-heated equipment. The PLC operating program precisely controls thermal oil temperature to ensure results are repeatable and consistent, batch after batch. The VersaWok can also be operated at lower thermal oil temperatures for products requiring lower cook temperatures, thus greatly broadening the product-line capability of this machine.

A special version of the Blentech patented leaf spring scraper, manufactured of a temperature-resistant polymer, is the VersaWok’s linchpin enabling it to stir-fry at extremely high temperatures. The SteamTherm Cooker is a batch steam rice cooker and represents the modernisation of batch rice/grain cooking. This PLC-controlled system automates the cooking of a wide array of rice varieties from short grain sticky rice for sushi applications to long grain basmati and jasmine rice varieties. Furthermore, the SteamTherm can process a variety of other grains and grains of dramatically different bran-layer thicknesses.  The SteamTherm is capable of sautéing ingredients for recipes to create prepared rice dishes such as risotto, pilaf, paella, biryani, etc. It can also be programmed to cook sauces to complement rice for ready meals. It is the complete machine for rice and grain based products.

The SteamTherm is designed to be gentle on the fragile cooked rice kernels. Cooked rice is delicate and must be treated with care in large production batches. When cooking rice in hemispherical kettles, the weight of the hydrated rice is likely to crush the soft kernels during agitation and discharge resulting in a product with uneven particle sizes and starchy “paste-like” quality. The SteamTherm is specially designed with a wide diameter, short tub length and an extra-large discharge door. The agitator paddles are specially sized to push the rice through the oversized door with fewer revolutions and minimum pressure on the fragile cooked rice kernels.

The key to quality rice is controlling the cooking parameters. Water/oil addition, cook or chill temperature, agitator rotation and RPM can all be PLC-controlled.  Blentech offers a high level of PLC interface/automation if appropriate for your process.

The counter-rotating twin solid screw agitator design gently blends the cheese while it imparts a controlled shearing action – improving quality. The “double action” of the two adjacent agitators moves the cheese in opposite directions continuously stretching the cheese. This stretching action is especially beneficial in developing the fibrous texture of mozzarella cheese.

The key to even heating is the proprietary poppet steam injector valves. The steam pressure pushes the sprung valve open during cooking, diffusing the steam flow in a 360⁰ radial pattern to distribute the heat evenly.  The blending action and variable RPM of the counter-rotating twin agitators quickly “fuse” the steam and cheese particles together while kneading the moisture into the dry ingredients allowing them to hydrate properly.

The HydraTherm is the first, truly industrial continuous cooking system for full absorption rice/grain/pasta that can produce authentic, high value-added products and flavoured rice/grain dishes such as Asian ‘sticky’ rice, Spanish rice, flavoured rice pilaf and similar grain products where precision control of hydration is crucial to cooked rice quality.

The full absorption cooking method meters sufficient hot water onto the product to achieve a customer-defined hydration level. This essentially eliminates starch-laden effluent, a costly by-product of conventional excess water cooking systems. The HydraTherm mixes as it conveys, so you can prepare flavoured rice/grain products with liquid and particulate ingredient additions without dilution. Furthermore, full absorption cooking is the only way to prepare authentic Asian ‘sticky’ rice for sushi and bento meal products.

The HydraTherm is completely automated so a single operator is able to manage the entire system. The PLC controlled intermeshing agitators convey the product forward through the cooker at an application-specific rate while gently mixing the rice so that all kernels are evenly heated by low pressure direct steam through the trough and hydrated by dosing of hot cook water from the zoned manifold mounted above the moving bed of product. The PLC-based recipe program precisely controls the rate of water addition to achieve a wide range of user-defined hydration levels.

The patented HydraTherm defines state-of-the-art performance for the continuous production of a wide array of rice/grain/pasta products. The modular system can include bulk raw product transfer, rotary washers, soak tanks, metered dosing of liquid and particulate flavouring ingredients, de-clumping systems to separate cooked product, post-cook equilibration belts and cooling/chilling systems that utilize forced air to cool the freshly cooked product to the desired final temperature.

The Magurit Starcutter industrial rotary dicer is designed for a continuous reduction of frozen products, at very low temperatures and high volumes whilst still maintaining a high quality cut, especially suitable for further processing in bowl choppers, grinders or other downstream equipment. This is achieved by the unique blade design and cutting drum geometry, coupled with the integrated block hold down device and the unique block feeding system.

The Starcutter dicer that cuts frozen blocks cleanly and efficiently, with a cutting drum and pneumatic feed ram it produces flakes of 3-9mm (model 314), or palm sized pieces of 14-20mm (model 344), at a typical production rate of 4000Kgs/hr at extremely low temperatures. Industrial production rates are also available with the 318 and 348 models at up to 10000Kgs/hr.

With the Magurit C-Cut knife system the fitting of vertical knives in the main cutting blade further reduces the piece size. A new model 312 has now been added to the range for the smaller producer. This gravity fed model is capable of reducing frozen blocks to flakes or pieces at a throughput approaching 1T/hr. Blentech’s mozzarella cheese cooker – The Fusion Cooker embraces one of the key factors in the perfect cooking of Mozzarella cheese which is to effectively mix the cheese curd as heat is added; the second is to distribute the heat energy evenly into the product to avoid the overheating of some of the curd particles. This is why traditional cooking involves heating and massaging the cheese curd whilst submerged in hot water. The new Fusion Cooker combines these two traditional principles in a way that maintains cheese quality with the advantage of improving yield.

The heart of the Fusion Cooker is the twin intermeshing agitators which fold the mozzarella cheese together as it is pumped through the mixing column and allows stretching and even heating, utilising steam poppet valves positioned along the column. As the cheese is processed in a closed system the normal loss of milk solids into the water encountered in the traditional hot water system is avoided, thus increasing yield. Additionally, as the curd is heated with direct steam, approximately 6% of the steam condensate is added to the cheese curd to heat it to the 60°C moulding temperature, increasing yield even more. A touch screen HMI coupled with user friendly PLC software, including multiple recipe driven automatic process controls, ensure decimal point temperature control accuracy and agitator speeds of up to 600 RPM, giving the final touch to this precision Mozzarella processing machine which is capable of production rates up to 4,500kgs per hour

Drum Cutting Machine

This drum cutting machine is ideal for the preparation of fruit juices and associated products. Both systems reduce frozen juice concentrates or pulps from common barrels/drums, e.g. standard 200 lt. barrels.  The budget 328NG is capable of processing 30 or 60 barrels/hr. Optionally roller conveyors, barrel lifter dumper, bag squeezer and mohno pumps can be offered.

Drumcut

Larger capacity is available with the 329 system: barrels with fruit or juice concentrates, which are filled in poly bags, are transported to the lifter dumper via a roller conveyor. Here the barrels are clamped, lifted and dumped into the crusher, the poly bag is held so it doesn’t fall into the cutting area. About 5% of the product remains in the poly bag, to remove this, the operator can now take the bag and run it through the bag squeezer, where two counter rotating rollers “squeeze” the remains out into the crusher. The frozen product is reduced by the crusher to the required piece size. The empty barrels are automatically discharged onto further roller conveyors.

MAGURIT offers its DRUMCUT systems, rotations cutters designed for handling and cutting of these large barrels. The DRUMCUT itself usually is “only” the heart of a complete, integrated solution, often also containing roller conveyor systems to bring the full barrels to and the empty barrels from the machine, barrel-lifting-dumping, poly-liner squeezing unit for the remains of product in the plastic bags, pump-systems for further pumping into tanks, and also often CIP preparation incl. valves, spray-balls and nozzles.

These are designed for productions of 8to/h and above, or the necessity of high volumes in very short time, like large batch productions.. The Infinity Cooker is a continuous direct steam injection cooker for thermal processing of products that can be pumped.  The infinity cooker is designed to cook processed cheese, sauces and slurries ( bean, fruit, meat, etc ).  The advantage of this system is the intermeshing agitation system coupled with the gentle steam injection system.  The result is a fully mixed and gently heated product with improved yields and high quality.

The Infinity Cooker is capable of cooking products with fragile particulates up to 1 ¼ inch diameter (30 mm).  It is the perfect answer to cooking process cheese, meat or fruit pie fillings, delicate custard deserts, thick chunky soups and sauces, fruit preserves and cooking any other product that requires precise temperature and pressure control. The continuous direct steam injection cooker is also an excellent aseptic pressure cooker for beans and slurries for the production of hummus and a variety of other dips. The combination of pressure cooking and direct steam injection is a highly effective method of heating bean slurries up to starch gelatinisation temperature.

For the automatic depalletising of frozen blocks. A pallet of blocks is loaded at the infeed lift and moved to the working height of the downstream equipment. Once in position a stainless steel wedge is driven forward to separate the uppermost meat blocks and feed them into the machine ram chamber. The operation is repeated until all of the blocks are used, when the empty pallet is delivered back to the down position for removal and replacement with the next batch.

The new Precut provides frozen block reduction and is a further development of the well proven Starcutter and can, due to its 1450mm cutting width, process very large plate frozen blocks, or when combined with the MAGURIT depalletiser 740, whole pallet layers of standard blocks.

The cutting drum is available with an open stainless steel drum or a closed version and can be fitted with one knife set or a double knife set if higher capacities are required.

For the reduction of large quantities of frozen blocks with up to 25to (55.000 lbs.) per hour we offer the Precut 328 and 330. These machines are used in productions in which need continues capacities beyond 8to/h, or very high volumes in very short times in batch productions. The Precut 328 with 700 mm cutting width is designed for the reduction of standard Euro blocks- or US-blocks, and also plate freezer blocks, while the Precut 330 with 1.480 mm cutting width can also reduce complete pallet layers. The ContinuTherm thermal screw is a versatile continuous cooking system configurable for a broad range of products; from meat and poultry to vegetables, pasta, rice and a wide array of other grains. With the appropriate custom modifications, the ContinuTherm can produce almost any product on a continuous basis.

Continuous thermal screws are sanitary and simple to operate and maintain. By switching from a batch process to continuous operation, processors benefit with streamlined product handling, labor reduction, product consistency and quality. Blentech specializes in turn-key ContinuTherm systems including raw material metering upstream and downstream separation, handling and cooling/chilling equipment.

In addition to designing ContinuTherms for customary cooking modes such as direct steam and water or oil immersion, Blentech has developed several unique processing solutions by adapting proprietary technologies to this “tried-and-true” continuous cooking system for high value applications. With the appropriate modifications, the ContinuTherm transitions seamlessly into a continuous stir-fryer, bacon-bit cooker or onion-caramelizing cooker just to list a few unique successfully executed high value applications.

Frozen Human Blood Plasma

The PLASCUT is a frozen human blood plasma bag opening system and the latest development from Magurit in a line of specially designed equipment for the fractionating companies within the pharmaceutical industries. Frozen plasma has to be removed from its plastic packaging and this needs to be done under very high safety and hygienic standards. The PLASCUT 592 opens the containers with a knife and enables the producers to remove the valuable product from the bag without destroying the container or introducing any form of contamination.

The bags are manually placed into the PLASCUT 592 from where they are automatically washed, dried, cut and emptied. The bags are squeezed to remove the plasma, with the empty bags being automatically moved to a waste receptacle.

The high speed batch mixer is a high shear batch mixer, cooker and cooler all in one.  It is a multifaceted piece of technology that has a wide array of applications. The list of applications is growing by the day and includes, but is not limited to the following products: hummus, cream cheese, pesto, dressings, cream cheese, processed cheese, analog cheese products, vegetable purees, mashed potatoes, various ground foods, concentrated soups, sauces, confectionary mixes, marzipan, batter and dough mixes, ready meals, etc.

This inclined screw conveyor is an all stainless steel construction for the efficient transportation of finished product from Magurit cutting machines. Specially designed and guarded to fit in place of the discharge tote bin. Available in discharge heights of: 1050 / 1400 / 1850 / and 2000mm

MAGCON inclined screw conveyors are normally used in connection with MAGURIT frozen block cutters, and therefore very strong laid-out for deep frozen products.

The MAGCON can be used with all MAGURIT frozen block reducers and can in high productions function as buffers, enabling a non-stop production for the frozen block cutters, resulting in higher throughputs.

The standard sizes we built are from 1.050mm discharge height, suitable for 200 and 300l trolleys, and also for 1000l boxes, to 2.200mm to feed continuously into grinders, cookers and or mixers.

All stainless steel vertical screw conveyor for the transportation of product when space is at a premium. Specially designed and guarded to fit in place of the discharge tote bin. Available in discharge heights of: 2000/ 2400 / 2800 / 3200 / and 4200mm

The great advantage of MAGURIT MAGURAFFE is the quick and clean product transportation on very little space. First through by a MAGURIT block cutter, or cut product (feeding of IQF product is of course also possible) is transported by a horizontal screw which pushes the product into the vertical screw system, lifting the product to the discharge height. The in-feed area of the MAGURAFFE is designed to fit all MAGURIT frozen food cutters, and can be placed under the cutters discharge area, and can therefore be integrated with the safety system. MAGURAFFEs exist with discharge heights of up to 2.800mm (110 “) above ground. Optionally the discharge head can be built with a swivel head – with max. 180° swing. This allows for example the feeding into two side by side installed mixers.

The MAGURAFFE is manufactured completely from stainless steel. It is designed to be mobile with 4 wheels and can therefore be moved away from the cutter and production area for cleaning and /or service.

The patented Blentech ‘wave-vane’ system are blending tumblers that overcomes the disadvantages of other designs by delivering strength in effective end-to-end mixing, tumbling and rapid discharge. The ‘wave-vane’ system is excellent for a wide variety of products. The smooth curvature of the helical vanes is gentle on products such as skinless bone-in chicken, beef rounds with minimal degradation when tumbling bone-in hams.

The gentle end-to-end mixing assures even distribution of curing liquids and marinades throughout sectioned and formed products while maximising protein extraction for better binding of whole-muscle products.  Yields of cooked and smoked products are improved because the brine solution is stabilized evenly throughout the cell structure of the meat during the vacuum marinating process, resulting in improved liquid retention in comparison to other vane designs.
